It was he who got the brainwave of then-novel idea of making top-grade whiskey inside sealed glass bottles. It was from this idea of him that Canadian Mist was born and grew to have a sale of US$2.5bn, in fiscal year 1994, out of which US$1.9bn could be accounted by sales of spirits and wines. Today, the Company has its headquarters in Louisville, Kentucky. It boasts of more than 6,400 employees in the US and abroad.
Through its Brown-Forman Beverages Worldwide, the group manufactures and markets a wide range of spirits and wines in the world. This range includes Jack Daniel’s, Southern Comfort, Canadian Mist, Korbel champagnes, Early Times, Bolla wines and Fetzer wines.
Canadian Mist is made from barley malt and corn. Premium quality grains are sampled, tested and used. The corn is grinded and mixed with water to extract the starch by pressure cooking the corn slurry. The Canadian Mist gets its light taste from this starch slurry. Then the enzymes of barley convert starch into sugar which is sent to fermenter.
The yeast is added and sugar converts to alcohol. The distillation to remove alcohol is done thrice to ensure super smoothness. The whisky is vaporized and mixed with steam and water. The flavor compounds are also removed while retaining a controlled amount to give Canadian Mist its unique taste, aroma and flavor. This whisky has a high proof and has to be reduced using clear and pure water from Georgia Bay. Later this whisky is put in barrels for mellowing.
The finest quality white oak barrels are used. They are charred to expose their red layer of wood. This imparts a smooth vanilla taste to the whisky. The whisky is matured in temperature controlled surroundings so that we get the same whisky through out the year. Finally the whisky is bottled and labeled to be delivered to the retailer. This final result is light in taste, smooth and mellow, perfect for cocktails and mixed drinks as well as simply over ice or water.
